聚赖氨酸是目前天然防腐剂中具有优良防腐性能和巨大商业潜力
的微生物类食品防腐剂,由25~30赖氨酸残基聚合而成,其具有
强烈的抑菌能力,可以作为防腐剂用于食品的保鲜。作为新型天
然防腐剂,聚赖氨酸已于2003年10月被FDA批准为安全食品保鲜
剂。
In the microbial food preservative area, ε-poly-L-
lysine shows effective antimicrobial properties and
possesses large commercial potential. It consists of 25
to 30 lysine residues, having strong antibacterial
capability, and can be used as preservative in food
preservation. As a new type of natural preservatives,
poly-L-lysine had been approved by the FDA for safe food
preservative in October 2003.
